FRESH VEGAN TORTILLAS WITH A GLUTEN FREE OPTION
This is one of those recipes that is so simple. Every time I make them I curse myself for not making them more regularly. If you have children they can hep make these too. If you read the ingredients on most store pack tortillas you will question why they use all those unnecessary ingredients. These are natural and additive free!
2 cups all purpose flour - (If making gluten free please use a gluten free plain flour. Sub a 1/4 of the flour for tapioca flour and add 1/2 tsp of baking powder)
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil or coconut oil
In a large bowl, mix all the ingredients by hand. Turn onto a floured worktop- knead 12 times, adding a little flour or water if needed to achieve a smooth dough. Leave to rest for 10 minutes.
Divide dough into eight portions. On a lightly floured surface roll out the mixture into a circle (mine were definitely not circles.... I tried!) .
In a large nonstick pan (very important that it is non stick), cook tortillas over medium heat until lightly browned (the tops will start to bubble a little). Flip and cook other side - the second side will cook quicker. If your tortillas are too ridgid reduce the heat a little
For homemade tortilla crisps, cut tortillas into triangles and bake at 175c until crisp. Add a touch of oil and seasonings- I love pink salt, chilli powder + paprika.
